Goat Cuts
Whole goat, bone-in cuts, baby goat and the traditional cuts — hand-processed and vacuum-sealed to your order.
Sourced from local Texas farmers and processed entirely in-house under USDA inspection and halal protocol. Cutting style is chosen at order, so tell us how your kitchen uses it.
A full goat, hand-processed and vacuum-sealed to order and cut exactly the way your kitchen needs it. Choose a small curry-style cut for everyday cooking, a large traditional cut suited to biryani and roasting, or a mixed cut that portions the legs and shoulder separately from the mid-section — a popular choice for gatherings and celebrations. Head, liver, kidney, and tongue are included, cleaned and packed separately from the main cuts.
Our standard bone-in goat, portioned into your choice of smaller pieces for a quicker-cooking curry or larger pieces suited to biryani and slow roasting.
Bone-in chops cut for the grill or stovetop, ready to season and cook quickly.
Bone-in rib sections with a good ratio of meat to bone, well suited to slow cooking and braises that let the rib flavor come through.
Bone-in leg meat, portioned into medium pieces sized for biryani and hearty curries.
A larger cut from the back leg, portioned into medium bone-in pieces for a more substantial, meatier serving.
From young goats under a year old, this meat is naturally more tender and milder in flavor than our standard cuts. Choose smaller pieces for everyday meals or larger pieces for biryani.
Quick-cooking chops from young goat, tender enough for a fast sear, pan-fry, or grill.
A whole leg from a young goat, left whole or portioned into medium pieces on request — a tender option for roasting, biryani, or curry.
Bone-in baby goat leg, cut into medium pieces for biryani and curry.
Ground goat meat, naturally leaner than ground beef with a distinct, richer flavor — well suited to keema, meatballs, and stuffed dishes.
Fresh goat liver, cleaned and ready to cook — a traditional choice for a quick, iron-rich pan dish.
Whole goat kidney, cleaned and vacuum-sealed, ready for classic preparations such as a kidney masala.
Goat heart, cut into pieces and ready to cook — a lean, flavorful organ meat suited to stews and pan dishes.
A traditional combination of goat head meat, brain, tongue, and bones, cleaned and ready for soups and slow-simmered dishes.
Goat trotters, well suited to the long, slow simmer that paya is known for, drawing out a rich, gelatin-bodied broth.
Cleaned and cut goat tripe, ready to cook for traditional slow-simmered dishes.
Raw goat fat, suited to rendering into cooking tallow or adding directly to curries and rice dishes for extra richness.
